That's really depends on how you choose to interpret it, isn't it? We all here know that Jackie is Tony's inspiration and hero, so it makes absolutely no sense for Tony to disrepect Chan in his movie. And most of all, it's just a gag. I'm surprise some people take it so seriously.

I think it is for those who'd love to see Tony and Jacky in a same movie. The section could be considered as a tease in anticipation of their meeting.

With Tony's growing popularity and great films, it could not be impossible. Jackie could play the role of a some kind of mentor since he is getting older. Or maybe an important fightning role but he would have to train back hehe.
